17 lb Choice Grade Brisket. Trimmed to about 15 lbs. Seasoned with HEB Salt and pepper mixture and custom mixture. 6am placed on T at 185 with smoke tube. Fat side down. Spritzed every hour 9am turned up to 225 Reached 160 IT at 7pm... 13 hrs... Wrapped and returned to T. Reached 202 about 7 am. 25 hour cook. Rested for 5 hrs Was really good. Moist and well seasoned.. Family loved the heavy black pepper of the HEB Salt and pepper blend seasoning mix.
