First Brisket


16 lb Prime from Sam's 12Am 225@ Outside temp 45@ 20mph north wind Seasoned with Traeger prime rib rub Stall hit by 7:30 but needs a little more color Wrapping at 8:30 1hr after wrapping it was cooking too slow so increased temp to 275 for last two hrs Result was tasty but not very moist on flat end Next time I would keep the temp low I also discovered I need to calibrate my probe as it was 10@ off
