On at 330 pm. Costco charcoal and Oak. Smoker between 250ish Wrapped at 11pm with wagyu beef tallow. Done at 11am. Rest to 180 then put in cambro Served at 5. 7/10. Very tender. Flat beneath point shredded a touch. Cambro held them to 160 when served.
2 18lb choice from Costco. Trimmed and SP the day before.
