Need to probably start testing tenderness at 195. The point area was at a pull apart tenderness.

Trimmed, seasoned and prepped Smoked at 190 for about 8 hrs Brisket boat and raised temp to 250 Cooked till 200 and tested with meat thermometer Pulled and rested for 2-3 hours
