On at 330pm Aug 24. Goal end time is 11am Aug 25. Serving at 7pm Cowboy Lump base with oak and ash logs Fat cap up, point towards firebox. Mid/back of smoker. Wrapped in butcher paper and panned at midnight.-Temp 162 Done at 930. Removed, let cool to 190 wrapped pan in foil, and put in Cambo.

18lb SRF black. Did a non comp trim Dry brine with little less than 1/4 cup salt 24 hrs prior S/P seasoned little paprika.
