Brine: (24 hours) 8 qt cold water 1 1/2 c kosher salt 1/2 c brown sugar 1 c bourbon whiskey 1/4 c whole peppercorns 2 lemons 2 oranges 1 red onion 5 cloves garlic 4 bay leaves Preheat smoker to 275 degrees, and add a wood chip box filled with apple wood. Spatchcock turkey, and cook until breast reaches internal temp of 165 degrees. Baste periodically with a butter/bbq sauce mix or a butter/seasoning mix. If skin darkens too early, place a loosely wrapped piece of tin foil around the skin.
