Cook at 240 degrees using cherry wood. Remove silver skin, lather in mustard, then apply rub. Cook for 2 hours in smoker. Remove, wrap in foil with butter, brown sugar, and honey, then place back on smoker with MEAT SIDE DOWN. Cook for 1:30-1:45 mins. Remove foil and apply bbq sauce to both sides of ribs. Dust with seasoning over top of sauce, and return to smoker for about 45 mins to 1 hour.
