1:15 smoker temp 140; added beef to smoker; all vents 33%. 2:30 smoker 270, meat 150; vents 10% 2:45 wrapped meat in foil 3:15 smoker 240, meat 165; vents 25% 4:30 meat 200; pulled meat

Made corned beef using Amazing Ribs recipe from small brisket flat. Desalinated for 16 hours- longer than wanted. Used Amazing Ribs Pastrami Rub prior to cook.
