Put on grill at 3:00am, 250F. 160F @ 7:00am. 177F @ 8:00am. Wrapped. 206F @ 10:00am pulled, rested for an hour, wrapped in a towel and placed in a cooler to keep warm. Ate around 5:00. Brisket was still warm and very tasty.
