10:45: started smoker with 20 lit briquettes in center of minion pile, vents 50% 11:15 - smoker 200; added St Louis ribs on lower rack; added 2 chunks apple wood 11:40- smoker 246; vent 1 to 25%, vents 2 and 3 to 10% 11:55- smoker 274; vents 2 and 3 closed 12:15- smoker 262; added baby back ribs; added 2 chunks apple wood 1:20- smoker 224; vents 2 and 3 10% 2:30- smoker 222; all vents 50%; stirred coals 3:15- smoker 235; wrapped ribs and switched top/bottom 4:00- smoker 220; stirred coals 5:20- removed ribs

2 racks baby back and 1 rack St Louis style Dry brined baby backs overnight, St Louis were purchased right before cooking so salt added the Used Meathead’s Memphis Dust rub on all three racks
