Salted ribs with kosher salt approx 1.5 hours prior; was not able to remove silverskin - 2:00- added ribs to already used WSM (bacon right before); cooker 240; added chunk of applewood; vent #1 25%, other vents closed. - 3:15- cooker 230; all vents to 25% - 3:45 - cooker 251; vents 2 and 3 closed. - 4:05 - cooker 262; all vents closed. - 5:00 - cooker 238; vent #1 25% - 6:00- ribs off; coated with BBQ sauce and grilled to carmelize

2 racks baby back pork ribs with MMD rub.
