Seasoned with Kosmo Q cow cover hot and coarse black pepper. 1. Put on the Traeger at 225 for 8 hours 2. Take it off wrap in butcher paper then pit it back on and bump up to 260. And put the probe in 3. Take off when internal temp hits 204 and let rest for 30 minutes 4. Wrap in Saran Wrap and but in a cooler for 2 hours 5. Unwrap and slice
