4# Top Round. Teriyaki Marinade - Soy Sauce, Worcestershire Sauce, Orange Juice, Garlic a little crushed red pepper. I usually add fresh Ginger but didn’t have any so I used ginger powder. Put in a ziplock bag over night. Sweet and Spicy Marinade - Worcestershire Sauce, Franks Red Hot Sauce. Fair bit of Crushed Red Pepper and Cayenne. Ziplock overnight and then added fresh black pepper before putting on the smoke. Smoked over oak for 4 hours. Had to do 2 batches and left the teriyaki on a bit longer. Usually put in the oven on the lowest setting overnight after the smoke but this time I just bagged it up after the cook. Definitely missed the fresh ginger on the teriyaki but overall pretty good. I need a dehydrator to finish.
