Wrapped after 7 hours when at 160F. Next time need to wait until after the stall to wrap. Pulled at 6:45. Temp was 207. Feels good to the touch. Will be eating later, so wrapped in a towel and placed in a cooler to keep warm. This turned out really well. I removed the brisket from the cooler at 1:30. I don’t know how it could have turned out any better honestly.
Salt, pepper and a 250F smoker. Change temp to 275F at time of wrapping.
