Using orange wood with a bit of oak. Smoker not getting up to temp I want due to wet wood and my impatience. Aiming for 275. Won’t climb over 225 Chalking this one up as a loser. Chicken was super moist but skin was rubbery. Just couldn’t get smoker up to temp with the wet wood. Lesson learned.
Chicken thighs with yardbird rub. I removed the fat from skin and also jaccard’d.
