First Brisket

Cooked faster than anticipated, so bottom got a bit crispy, but overall a fantastic first brisket. Threw in some smoked and seared pork belly a la Manny’s for good artery clogging measure.

Whole packer brisket, salt, pepper, Traeger beef blend pellets, pit boss pellet grill
